Individual user responsibilities for fields within opportunities

We use CRM to handle various deals that we consider, making each deal an opportunity with different characteristics. We use the opportunity entity to track the progress of each deal, including what work has been done by the users.

Is it possible to assign an individual field to a user within the CRM, and track whether or not they have completed it? For example, I have a list of items that need to be put into a package of documents such as a cover page, executive summary, and valuation. I would like each item to be assigned to a different user, and available for viewing and editing within the opportunity. 

I have tried to implement this using activities, but found that activities are rather inconvenient because they cannot be viewed as a list within opportunities, and one must navigate to a completely different page to interact with them. Does anyone know if what I want is possible?
