Assign based on value of another field

I have created configuration upon configuration for my end users.  This means that for each work area the supervisor can specify who should be assigned incoming cases.  On create of a case, when the work area is selected, I take that value --- either user or team -- and assign to the associated "Assign to Team" or "Assign to User" custom attribute I put on the case entity.  

Now, how do I get that value to be the Owner value?  A workflow using Update Record will not allow me to modify Owner.  And the Assign choice does not let me use another field's value.
