Workflows - some entity fields don't appear

Hi all,

I'm trying to set up an on-demand workflow in Customisation>Processes.

What I'm trying to do is very simple: enable me to select some ('Donation') records and update one Managed field ('Status Reason') on-demand.

However, when I go to set this workflow up, the field is not visible in the Update Record>Settings window. See screenshots below.

If anyone has any advice, I'd be so hugely appreciative - I'm tearing my hair out here!
